Regular urban street markets and annual fairs were the means by which agricultural produce was sold.

The width of many burgh high streets and market streets indicate their former sites and the space once needed to accommodate them.

By the time this photograph was taken, in the 1870s, on-street livestock markets were on their way out. Many had been moved to purpose-built premises, often near railway yards, in the interests of public health and order.
